–The Person in Charge does not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

–Observed an in-use knife stored between the sandwich cooler edge and wall, an area not easily cleanable and sanitized.

–Observed a cell phone stored directly on a prep table in the kitchen.

–Observed dried food residue on the blade of the table mounted can opener.

–Back dry storage area has many holes in the walls and gaps in the doors which needs repaired.

–Observed 10 to 15 rodent-like droppings near the back door.

–Sandwich cooler was holding several foods at 56F rather than 41F or below as required.

–Time in lieu of temperature being used in the food facility to control ready-to-eat potentially hazardous foods (pizza) without written procedures or documentation to verify disposition of food.

–Refrigerated ready-to-eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked.

–Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.

–Observed a whole in the wall near the back door and a gap in the door that does not protect against the entry on pests.

–A food employee was observed touching lettuce – a ready-to-eat food – with bare hands.

–Observed food residue inside the chest freezer.

–Observed food residue on the backside and on the floor around the ice cream machine. Hoses on the backside of the machine are leaking.

–Observed dried food residue in the corners and edges of the milkshake machines.

–Ice cream mix in the hopper was observed at 49F, rather than 41F or below as required. Hoppers are not refrigerated. Suggested using smaller batches of mix.

–Chest freezer is leaking on the floor in the kitchen.

–Door gasket is broken on the toppings cooler and needs repaired.

–Observed a broken refrigerator in the kitchen not being used. Refrigerator has mold-like substance inside.

–The Person in Charge does not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

–Observed wet wiping cloths throughout the kitchen, not being stored in sanitizer solution.
